Let us rejoice! It’s Taco Tuesday! Have no fear, you can still stay on track with a healthy diet while celebrating Taco Tuesday. There are plenty of taco recipes that are well balanced and provide a healthy combo of proteins, carbs and healthy fats. Take for instance our Fiery Steak Taco recipe.
FIERY STEAK TACOS
These tacos have some great flavors and using guacamole instead of sour cream or cheese makes them moist and mouth watering.
– Flank steak
– Extra Virgin Olive Oil
– Mexican oregano
– Cayenne pepper
– Red bell peppers
– Yellow bell peppers
– Jalapeño peppers
– Lime juice
– Flour tortillas
– Salt and pepper
In a large bowl, season the steak on both sides with the fresh lime juice (squeeze two limes), oregano, cayenne pepper, garlic and light salt and pepper and then drizzle with some extra virgin olive oil. Allow this to marinate fore anywhere from 30 minutes to 2 hours in he refrigerator.
Grill the steak 8-10 minutes on each side or until your desired temperature. Remove the steak from the grill.
Add some oil to a skillet and stir fry the chopped onion, and jalapeño, red and yellow peppers until cooked.
For the guacamole, in a bowl, mash the avocados until smooth, add a squeeze of lime juice and salt and pepper to taste.
