Post-Workout Sweet Potato Brownie Recipe

Just because you are trying to eat clean and healthy doesn’t mean you can’t treat yourself to some “consciously made” treats. Repeat after us, “brownies can be our friend”! Just swap out some of the ingredients that give treats like brownies and cookies a bad rep and you have yourself a healthy AND delicious guilt-free treat.

Sweet potatoes are a nutritional powerhouse whether you are trying to bulk up or cut weight. The fiber-rich root vegetable contains carotenoids that prevent cell damage (probably a good idea as your body repairs after killing yourself on leg day?), Vitamins A and C, which have anti-inflammatory properties and Potassium. The shredded zucchini gives you an extra serving of vegetables while adding moisture to the brownies. Add in the egg whites and quinoa and these brownies provide the perfect mix of carbs and protein to kick off the muscle-recovery and growth process.

POST-WORKOUT SWEET POTATO BROWNIES

Ingredients:

  • 2 large sweet potatoes, skin removed
  • 1/2 cup quinoa flouror oat flour
  • 1 zucchini, grated (optional, but recommended for added moisture)
  • 1/2 cup cocoa powder
  • 1-1/2 tsp baking powder
  • 2 eggs
  • 3 egg whites
  • 1/3 cup raw organic honey

Directions:

  1. Preheat oven to 415 F.
  2. Bake potatoes for approximately one hour, or until they’re soft. Allow to cool to room temperature.
  3. Preheat oven to 350 F.
  4. Mash sweet potatoes into a large mixing bowl. Add all remaining ingredients and mix thoroughly.
  5. Evenly divide batter into a muffin pan. Bake for 30 minutes, or until a toothpick inserted into brownies comes out clean.
